Black bean chocolate cake with avocado frosting
This is a moist, richly chocolate cake. It is hard to believe that it is made from nutritious high fiber beans and very little oil. It is gluten free, dairy free and guilt free!
5 dl (2 cups) cooked, well rinsed black beans
45 ml (3 tbsp) oil
125 ml (½ cup) cocoa powder
¼ tsp salt
2 tsp vanilla sugar or 1 tsp extract
1 tsp baking powder
¾ cup honey, sugar or agave syrup
Preheat oven to 180C (350F)
Spread oil in a 20 by 20 cm pan (8’x8’)
Combine all ingredients in a blender. Blend until smooth. Pour into pan and bake 25-30 minutes. Leave cool before taking out of pan
1 ripe avocado
1 tbsp soft butter
½ tsp vanilla
5 dl (2cups)icing sugar
2 tbsp cocoa powder
Blend all ingredients in a blender or with an electric whisk until smooth. May need 1-2 tbsp of water to get blender going.
Spread on to cooled cake.
Also can be served with whipped cream instead of avocado icing.
